We all love hot dogs and burgers, however, foil pack recipes for camping are a great and easy alternative.  Campfire foil packs can be made in a variety of ways which include breakfast, lunch, dinner, and even dessert!  You can either find a recipe to try online or let your imagination run wild.  This recipe is one my families favorite campfire recipe.

There are many camping recipes, but we love the foil pack recipes for camping because they are easy to make for camping and can be prepped at home ahead of time.  Spending just 30 – 40 minutes at home prepping this campfire recipe will allow less clean up at your campsite and also allow more time to enjoy the outdoors making memories with family and friends.

If prepping at home, simply pack the campfire foil packs in an airtight zip lock bag or airtight container inside the cooler.  When you are ready to cook remove the campfire foil packs and get ready for a delicious juicy meal.  You can use any combination of meats and vegetables that you would like but here is one of our favorite recipes using boneless chicken breast, fresh vegetables, potatoes, and a little garlic.

When making campfire foil packs be sure to use plenty of oil olive and foil otherwise your food could burn.  After cooking or if you need to open the foil pack to see if it is fully cooked be careful due to steam that will build up inside the pack while cooking causing emerging steam from the foil pack.  This steam can cause burns so please use caution.  We recommend using oven mitts when opening.

Ingredients Needed

  • 1 pound skinless, boneless chicken breast meat – cubed
  • 2 onions, diced
  • 1 (8 ounce) package sliced fresh mushrooms
  • 1 yellow bell pepper, seeded and sliced into strips
  • 1 red bell pepper, seeded and sliced into strips
  • 4 cloves garlic, sliced
  • 4 small potatoes, cubed
  • ¼ cup olive oil
  • 1 lemon, juiced

Build a campfire and allow the fire to burn until it has accumulated a bed of coals.  Rake the coals into a flat bed on one side of the fire.  If the fire ring is big enough you can have a small fire going on the other side to produce additional coals if needed.  If not just be sure to have plenty of coals before starting the cooking process.

Step 3

Combine chicken, onion, mushrooms, peppers, garlic, and potatoes in a large bowl or a large resealable plastic bag.  Pour in olive oil and lemon juice and toss to coat.  Remember not to skimp on the olive oil otherwise your food could burn.  At little more never hurts.

Step 4

Evenly divide the mixture between 4 large sheets of aluminum foil.  We like to add a couple of tablespoons of butter or a little more olive oil directly into each foil pack to help reduce the risk of the food burning.  If you would like to add any additional seasoning this would be a good time to add it before wrapping up the campfire foil packs.  Top each with another sheet of foil and roll up the edges tightly.  Double wrap each packet with another sheet of foil.

Step 5

Cook over the preheated coals until chicken is no longer pink in the center and the juices run clear about 40 – 50 minutes.  We suggest during the cooking process turning them over about halfway through the cooking to help ensure even cooking of the food.  When turning the campfire foil packs use a burger spatula but be careful not to puncture the campfire foil packs otherwise you will lose all wonderful juices packed inside.  If you do happen to puncture a foil pack, simply take the existing campfire foil pack and rewrap it with additional foil (do not remove the original foil).   An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).  We do suggest opening the foil pack to get a temperature reading because you want to ensure that you are taking the temperature from a piece of chicken not a vegetable.
