Howling Hills Chocolate Peppermint Waffle Cookies

A RV kitchen can make baking a challenge during the holiday season.  Desserts tend to take center stage at holiday gatherings and living in a RV can pose a challenge.  Here are a few easy no bake holiday recipes that are easy to make in a RV kitchen.

Chocolate Peppermint Waffle Cookies

You can skip the RV oven since these cookies are made right in a waffle iron!

 

  • Cookie Ingredients
    • 1 cup of butter
    • 4 oz. unsweetened chocolate, chopped
    • 1 1/2 c. sugar
    • 4 eggs
    • 2 tsp. vanilla extract
    • 1/2 tsp. salt
    • 1/2 tsp. instant coffee powder
    • 1/2 c. cocoa powder
    • 1 1/2 c. all-purpose flour
  • Glaze Ingredients
    • 2 tbsp. butter
    • 1/4 c. powdered sugar
    • 2 tbsp. cocoa powder
    • 1-2 tbsp. milk
    • 1/4 tsp. peppermint extract
    • Crushed candy canes
  • Directions
    • Melt butter and unsweetened chocolate in a saucepan over low heat.  Cool slightly
    • Beat sugar, eggs, vanilla, salt, and coffee powder in a large bowl.  Add melted chocolate.
    • Mix in cocoa powder and flour until combined.
    • Preheat waffle iron and lightly grease the grids.
    • Spoon 2 tbsp. of batter into each section.  Cook until set (1-1.5 minutes).
    • For the glaze…  Melt butter, stir in powdered sugar, cocoa powder, milk, and peppermint extract until smooth.  Dip cookies in glaze and sprinkle with crushed candy canes.

Buckeyes

A favorite among the gatherings during the holiday season.  These are a classic no bake treat that everyone loves.

  • Ingredients
    • 2 1/2 c. powdered sugar, sifted
    • 1 c. creamy peanut butter
    • 6 tbsp. butter, melted
    • 1/2 tsp. pure vanilla extract
    • 1/4 tsp. kosher salt
    • 8 oz. semisweet chocolate, chopped
    • 1 tsp. vegetable shortening
  • Directions
    • Line a baking sheet with parchment paper.
    • Mix powdered sugar, peanut butter, butter, vanilla, and salt until well combined then form into balls.
    • Chill for about 20 minutes.
    • Melt chocolate and shortening in the microwave.
    • Dip each ball into the chocolate, leaving a circle of peanut butter visible at the top.
    • Chill until firm and serve!

Chocolate Peppermint Puppy Chow

What kid does not like puppy chow?  This is a great holiday twist to the childhood favorite!

  • Ingredients
    • 1 1/2 c. powdered sugar
    • 1 1/2 c. semisweet chocolate chips
    • 3 tbsp. coconut oil
    • 1/2 tsp. peppermint extract
    • 8 c. chocolate Chex cereal
    • 6 candy canes, crushed
  • Directions
    • Divide powdered sugar between 2 gallon sized bags and set aside.
    • Microwave chocolate chips and coconut oil until smooth.  Stir in peppermint extract.
    • Combine Chex cereal and crushed candy canes in a bowl.
    • Divide cereal mix between the 2 bags, seal, and shake to coat.
    • Spread onto parchment paper to cool.
